Girl Camper Janine Pettit’s pie iron pumpkin pie

Our friend Janine Pettit, the founder of Girl Camper, shared a wonderful idea for using pie irons to create individual pumpkin pies. Janine recommended getting your pie irons from Rome Pie Irons.

Ingredients 

1 can Pumpkin Pie Mix*

1 can Carnation Evaporated Milk

1 loaf Soft White Bread

1 stick Butter, Softened

The Filling

• Mix pumpkin pie mix with evaporated milk until you get a mixture that is fairly thick

The Assembly

• Butter both sides of the bread

• Place one slice of bread onto the pie iron.

• Work carefully; the irons are hot!

• Spoon a big dollop of pumpkin mixture into the inside of the buttered bread

• Top with a second slice of buttered bread

• Remember, butter both sides!

• Seal the pie iron closed and remove any excess bread

The cooking

• Toast for a few minutes on each side over hot coals.

*Note: pumpkin pie purée and pumpkin pie mix are different. Make sure you get pumpkin pie mix which is pre-seasoned.
